Easy peasy – rainy day cupcakes! Well, any-day cupcakes really! These cupcakes are so easy to make and can be topped with cake toppers, sweets or anything yummy!
200g Self raising flour
200g softened butter
200g caster sugar
2 medium eggs
1- Mix together the butter and sugar until light and fluffy
2- Gradually add the egg.
3- Gradually add the flour, mixing all the time.
4- When the mixture is smooth, spoon into cupcake cases
5- bake in the oven (180) for approx 20 minutes or until brown and risen.
6- Allow to cool then add frosting, icing or other topping choice!
