This yummy tea is from the fab Jamies 15 minute meals book and is truly delicious!
You’ll need:
25g dried porcini mushrooms
Olive oil
2-4 cloves of garlic
1/2 small dried chilli (leave out if your littly doesn’t like spivey food!)
250g chestnut mushrooms
6 sprigs fresh thyme
320g dried Farfalle
1 tsp truffle oil
1 lemon
1/2 bunch of fresh flat-leaf parsley
150g low fat cottage cheese
How to:
Put the porcini into a mug and cover with boiling water.
Crush the garlic in a garlic press and add the chilli into a heated pan of olive oil (2 tbsp)
Tear the mushrooms and add.
Strip the thyme and add the soaked porcini and toss together, frying for a few minutes.
Cook the pasta.
Whizz the mushrooms in a blender until smooth then return to the pan and add 3 ladles of pasta cooking water and the truffle oil. Season to taste and simmer gently.
Drain the pasta and toss it with the sauce. Grate over the lemon zest and finely chop the top leafy parsley and add along with the cottage cheese.
Toss together and serve.
