These Peppermint mini Christmas puddings make great teachers gifts or Christmas party treats!
You’ll need:
500g (1lb 2oz) icing sugar, sifted
1 egg white, stiffly whipped
1-2tsp lemon juice
Few drops peppermint oil, to taste
To decorate: (optional)
Holly icing decorations (we got ours from Asda.)
Small bar of melted chocolate
How to:
1. Mix together the icing sugar, egg white, lemon juice and peppermint oil until you have the texture of pastry.
2. Knead well so that the mixture is smooth, then roll into little balls.
3. Dip one side into melted chocolate
4. Decorate with the holly icing decorations.
5. Leave to harden for 12 hours or overnight.
