Christmas Biscuits from Sara’s cooking class!

You may remember back in November when I went to Amsterdam to hear all about a new online cooking game called Sara’s cooking class?

Well the lovely Sara has been busy – she’s getting ready for Christmas and has kidly sent us a rather festive recipe to share with you all!

Sara’s Christmas Biscuits

Serves 35

Prep Time: 10 minutes (including 30 minutes for chilling)

Cook Time: 15 minutes (including 10 minutes for cooling)

Total Time: 25 minutes

Ingredients:

  • 175g butter, softened
  • 100g caster sugar
  • 1 medium egg yolk
  • 250g plain flour
  • 50g royal icing sugar, made up as instructed
  • Silver balls and ribbon

Method:

  • Beat the butter and sugar until creamy. Beat in the egg yolk and add the flour and mix to a smooth dough. Gather together with your hands, wrap in clingfilm and chill for 30 mins.
  • Preheat the oven to 180°C/ 160°C fan/gas mark 4. Line two baking trays with baking paper.
  • Roll out the dough between two sheets of clingfilm to the thickness of a £2 coin. Cut out into stars or trees or just rounds and put on the baking trays, leaving a small gap around the biscuits. If they are to be hung on the tree make a small hole for the ribbon.
  • Bake for 15 mins, leave for 10 mins and then cool on a wire tray. Pipe or drizzle some icing onto the biscuits and decorate with silver balls. Allow the icing to set before storing.
