Basic-ally awesome – A three course meal for FOUR for under a Tenner!

This week we had a tough challenge – to spend as little as possible on a great family meal using the Sainsbury’s basic range. I’m rather proud of our basic-ally awesome THREE course meal for four for under a tenner!

Under a tenner you say? For four people you gasp? THREE courses?

 

Oh yes.

 

I’m not kidding! Three yumalicious courses for our family of four, cooked using Sainsbury’s basics food range.

 

So my lovelies – here is our Basic-ally awesome three course meal for four!

Starter – Bruschetta

Main – Mushroom Risotto

Dessert – Chocolate pots

To make the Bruschetta you’ll need:

Pack of tomatoes

2 onions

Drizzle of olive oil

Pack of basil

Nice bread rolls or sliced thick bread

How to:

1. Chop all the ingredients finely and pop into a bowl and stir.

2. Add the oil (not too much but enough to taste) and stir well.

3. Pop in the fridge to chill

4. Toast the bread, rub with garlic then add the bruschetta topping from the fridge

 


To make the Mushroom Risotto you’ll need:

20z Butter

2 medium onions

Risotto rice

1 pint vegetable stock

10z grated cheese

10z butter melted

 

How to:

1. Melt the butter in a deep saucepan and saute the onions

2. Add the mushrooms and cook for 10 minutes

3. Add the rice and cook for another 5 minutes

4. Add the stock,salt and pepper stirring all the while. Reduce the heat, cover the pan and leave to cook on a low heat for 20 minutes or until all the liquid is absorbed.

5. Add the melted butter and a little cheese.

6. Serve in bowls and sprinkle with cheese.

 

To make the Chocolate pots you’ll need:

4 oz Dark chocolate

3 oz sugar

15 fl oz milk

3 tablespoons cornflour

 How to:

1. Melt the chocolate in a double boiler over a low heat.

2. Add the sugar and stir in until dissolved and the mixture is smooth.

3.take 3 tablespoons of the milk and add to cornflour to make a paste.

4. Add the paste to the chocolate, stir thoroughly and cook on a low heat.

5. Add the rest of the milk and cook on a low heat until smooth.

6. Pour into pots and allow to cool before storing in the fridge for an hour.
