This eggless apple & raisin cake was an experimental recipe. We had no eggs, but we had lots of apples! We fancied cake (we always fancy cake) and so our apple and raisin cake of awesome was created!
To be totally honest, this is no Great British Bake-off creation – it’s not light and fluffy as the apples make it a little stodgy – but it tastes amazing, and the littlies love it served with custard!
To make our eggless apple cake you’ll need:
4 apples
200g SR Flour
200g sugar
200g butter
2 tbs milk
1 tsp baking powder
How to:
1. Peel and chop 3 of the apples, simmer in boiling water for 10 minutes then purée until smooth.
2.mix together the butter and sugar until smooth.
3. Add the flour and mix until smooth.
4. Add the purée and the milk and mix until smooth.
5. Put the mixture in a non-stick baking tin, place the sliced apple pieces on top prettily, sprinkle with a little sugar and cook in the oven on 180 for 25-30 minutes or until brown.
