Yummy Banana loaf – by Dad of two, Mark Dyble

I love this recipe as it’s a no frills, quick and easy cake to make. So easy in fact that you can get the kids to do it!

Add icing and some toppings and hey-presto! You have got yourself a nice moist soft cake that’s great on it’s own or with some custard!

You will need:

400g/14oz/3 Ripe Bananas
…300g/10oz Self Raising Flour
150g/5oz Soft Butter
150g/50z Brown Sugar (Demerara)
2 Eggs
80g/3oz Walnuts or Sultanas if desired
2 Teaspoons Lemon Juice
2 Tablespoons of Olive oil

Method

Pre-heat your oven to 180c/350f/Gas mark 4

Grease a 900g Loaf tin and line with greaseproof baking paper.

Get your Bananas, peel them and mash them up in a big bowl.

Mix the butter and sugar together.

Add sugar/butter mix and Walnuts/Sultanas to the mashed up banana and stir in trying to get as much air into the mix as possible.

Add half the flour and 1 egg and again mix in incorporating as much as as possible, then add the other half of the flour and the other egg to the mix and continue to mix.

I find that lifting the mix on your mixing spoon whilst stirring really works well.

Add the lemon juice and olive oil and keep mixing.

When your arms are tired (!) pour the mixture into the tin.

Smooth and level and pop into the oven for around 60 mins.

Test with a fork or skewer if it comes out clean it’s done!  If not pop back in for another 5 minutes.

Voila – nice moist Banana Cake!
